The limitations of VoIP

I’m setting up a small office phone system and I'm realising the limitations of VoIP. I have an office and an assistant. My assistant picks up all calls and announces who is on the phone. Usually, I want him on the phone with me (to take notes, be aware of what's going on, etc.). What I realise is that with VoIP, if he wants to be on the call with me, he has to conference me in. Then all other incoming calls go straight to voicemail. If it were an analog phone, and we had two lines, we would both be on line one, leaving line two free for incoming calls. So, is there a way my assistant can be on the VoIP phone with me and still be able to see other incoming calls?
